The Yorkshire Wolds Cookery School near Driffield is celebrating game season with a series of themed cookery events.
To kick-start the series and embrace game cooking at its very best, Michelin-starred chef James Mackenzie from The Pipe & Glass is hosting Game On…The Menu on Monday 28th October.
Alison Johnson from The Yorkshire Wolds Cookery School said: “ We are delighted that James is continuing his association with the cookery school. He is running a new course where participants will recreate a number of seasonal game dishes from his debut book On The Menu.”
The Yorkshire Wolds Cookery School is ideally situated close to Yorkshire’s finest shooting estates. Alison continued: “ We strongly believe in using fresh, seasonal and locally sourced ingredients whenever possible at the cookery school. These courses are designed to take advantage of the game on our doorstep, so people can learn more about this underused but wonderful food.”
The following two courses will take place with the cookery school’s resident chef, Ali Bilton. Participants will prepare three dishes to serve four people. Sample dishes include pheasant curry, game terrine, Valencian paella with rabbit and pheasant, venison, bean and chorizo casserole with sweet potato mash and partridge tagine with fruit and nut cous cous.
For those that just want to sit back and relax Ali will be carrying out a Cooking with Game Demonstration Evening on Saturday 11th January 2014, 7.00pm
