Chutney halloumi fritters with a chicken stir fry

INGREDIENTS:
• Juice of half a lemon
• 5 slices halloumi
• 1 tbsp flour
• 1 egg
• 2 tbsp mango chutney
• 3 tbsp panko breadcrumbs
• Half a chicken breast
• 1 tbsp nut oil
• 1 clove crushed garlic
• Half a red chilli
• 1 tomato
• 1 tsp ginger
• 1 spring onion
• A splash soy sauce
• 1 tbsp chopped parsley

METHOD:
• Cut the halloumi slices into circles and squeeze lemon juice over them. Mix the egg and chutney together. Dip the halloumi slices into flour, shake off any excess. Put into egg mixture and then into the breadcrumbs. Pan fry in oil and butter.
• Heat oil in a new pan. Add garlic, chilli and ginger. Colour, then add spring onions.
• Cut chicken into strips, colour in the pan with the spring onions, add tomatoes in quarters and cook, add coriander and soy to finish.
• Place discs of cheese on a plate, pile the stir fry on top.
