MACKEREL FILLET WITH MOZZARELLA TOPPING

A quick and easy seafood dish by Aldo Zilli.
INGREDIENTS PER PORTION:


  • 1 small mackerel fillet

  • 1 thick slice mozzarella

  • 1 tsp rosemary

  • 1/2 red onion

  • 1 small tomato

  • 1 clove garlic

  • 2 tbsp breadcrumbs

  • 2 tbsp extra virgin olive oil

  • 2 tsp balsamic vinegar



METHOD:


  • Clean and fillet the mackerel or buy it filleted.


  • Place the garlic, mozzarella, rosemary, in a food processor, blend for 1 minute. Add the olive oil and breadcrumbs and blend for a further minute to make a paste.


  • Pan-fry the mackerel and then using a teaspoon spread the paste over the mackerel. Place the mackerel under the grill and cook for a further 3 minutes.


  • For the salad, slice the red onion and tomato and dress with olive oil and vinegar. Place the red onion salad in the centre of a plate and place the mackerel fillet on top.
