White Chocolate and sour cherry mousse

INGREDIENTS:• 200g mascarpone cheese
• 60g white chocolate, chopped into small pieces
• 50g dried sour cherries, chopped into small pieces
• 50ml double cream
• 1 tsp vanilla extract
• 2 oz fine caster sugar

METHOD:• Boil the dry sour cherries with 4 tablespoons of water and the caster sugar until you make a syrup. Remove from the heat and pour into a bowl sitting in ice and water to cool it quickly.
• Melt the white chocolate in a double boiler. Half whip the cream, add the vanilla and fold into the mascarpone, then fold the melted chocolate into the mixture.
• Pick the cooled cherries out of the syrup and add to the creamy mixture.
• Pour in a serving glass, drizzle the sour cherry syrup over the top.
